Bought the Everest a couple of years ago and it's pretty much my favorite.
This is a BIG boat - bought it to do a week long downriver(s) trip (lazy, B&B to water to B&B) which is still pending. It sits pretty high, so I still swap out for a Pirouette (yeah, I know. I collect 'em) if I want to wear every little bit of water.
Light enough that I can one-hand it up to carry, spins and plays as you'd expect. Extremely stable, tracks like a laser, rolls like a dream. Ferrys in & out of eddys without grabbing. The ads say you can pack enough gear for camping - true enough but only if you pack like you're biking. Be careful with the weight distribution, a little off changes the tracking.
Lots of room for you (I'm 6'@225lb and look like a marshmallow stacked on a popsicle stick in most boats), and comfortable enough for hours.
