I have had my Peregrine for 2 years now and have had it on several trips as well as many days fishing from it in local waters. 90% of my travel is on lakes. My Peregrine is the premium layup. I have found the lightweight a joy on portages. The canoe is plenty stable for fishing and handles my load on a trip well. It tracks well and is easy to maintain a decent pace (3.5-4.5 MPH on my GPS) with minimal effort. It is also fairly easy to handle in wind and rough water conditions. I also have the Ed's bucket seat which I recommend. For my use the Peregrine is the perfect solo.
